 Post subject: Spinach and Veggie Omlet

I did not eat spinach b/f FatSmash! I got tired of eating the same veggies everyday. So, here goes.

Pam cooking spray
Stir-fry vegetables (onions, green, red, yellow, orange bell peppers)
Pictsweet chopped spinach-THAWED (Found in the frozen food section cheap 69 cent at WalMart)
1 cup egg whites
Salt
Pepper

Chop the vegetables into small pieces (use as much as you like), drain your spinach in a paper towel (use as much as you like), spray your skillet with pam and sautee your veggies and spinach on medium heat for about 3 minutes. Add a little pepper and salt if you like! Then take your veggies and spinach out and put them on a saucer. Take your cup of eggs and add salt and pepper to flavor, mix well. Respray the same skillet with pam and pour in your eggs. Flip your eggs when they have become solid on the bottom of the skillet. Add you veggies and spinach to 1/2 of the eggs and fold the other half over the spinach and veggies. Press firmly for a few seconds and flip your omlet over to make sure the veggies and spinach are reheated.

I've also used the spinach! :) And add a few crumbles of low fat feta cheese.....its delicious! :)
