1 lb lean ground beef
8 whole wheat tortillas
1 packet taco seasoning
1 can ff refried beans
1 can ff or low fat cream of chicken soup
1 cup milk
Shredded cheese

Cook ground beef, drain and mix the next 3 ingredients in. Spoon in to tortillas roll and lay in a pan. Mix milk and soup and pour over the top. Sprinkle with cheese. bake at 350 for a haif hour. You may need 1 more can of ff soup to make it a little thicker.

I don't really think the soup is fs friendly. I eat it with out the the soup and just sprinkle cheese on mine. It is so good with the sauce on top so I would be interested to know if we can have that. It is also good with a little ff sour cream on tip.

Those sound more like enchiladas than chimichangas. If it's FF soup I'm sure it's an OK dinner for Phase 4 occasionally.
I knew I should have clicked on that though because it looks tasty regardless of the title! :D

Chimichangas are deep fried burritos...I know them far too well, as do my hardened ateries! :lol:

Yeah these chimichangas are not fried. But that is what the recipe is called. Who knows. All I know is that they taste good.

Isn't that basically Phase 3 since don't *have* to have pasta or any of the other additions. It's just like how I don't believe there's a 1.5 it's just Phase 2 and one is choosing not to incorporate some of the new additions. :lol:

Yeah I guess your right Amanda. I just like to call it that I guess. I'm basically doing everything that you would have on p2, but just adding in the dessert. I haven't added in the bread or pasta yet. So that is just what I was calling it. But it doesn't really matter because I am still staying within fs guidelines. Right?

Aren't wheat tortillas a no-no on P2? I thought they only came in at P3 - I just bought myself some last week and they sure are a nice change up!

Melissa - I think whole wheat tortillas are allowed on Phase 3 as a substitution for a serving of bread. It's defintely not OK for Phase II though. I just bought some this week but haven't tried them yet. What brand did you buy?
